Ingredients

25g / 1oz grated Vintage Clothbound Farmhouse Cheddar
75g / 2½oz grated La Couronne Fort Aged Comté AOC
20g / 1oz Le Conquérant – Beurre de Baratte Butter AOP – French Butter
2 slices rye sour dough bread
20g / 1oz spiced mustard spread
60g / 2oz sweet pickled white onion
Pinch of kimchi salt
Pinch of white pepper

Method

(1) Butter the outside of your bread, layer all the ingredients and place on a hot sandwich press.

(2) Turn sandwich intermittently and flip halfway through cooking for even melt.
