Fattoush Halloumi Salad Recipe| Aphrodite Halloumi

Ingredients
- 225g / 8oz (cut 2cm thick) Aphrodite Halloumi PDO
- OR Aphrodite Goat Milk Halloumi
- 2 tomatoes, diced
- ½ white onion, finely chopped
- 1 red pepper / capsicum, diced
- 3 medium cooked beetroot, diced
- ½ cucumber, diced
- 1 cos lettuce, shredded
- 1 bunch of pea shoots or watercress
- 1 large toasted pita bread
- seeds of 1 pomegranate
- handful of flat leaf parsley, chopped
- torn mint leaves
- pinch of sumac
- drizzle of pomegranate mollasses
- good drizzle of olive oil
- generous squeeze of lemon juice
- cracked pepper to taste
Method
(1) Heat a nonstick pan to medium to high heat. Add thickly sliced halloumi to pan and cook for approximately 2 minutes on either side or until golden brown.
(2) Combine toasted pita bread, pea shoots, cos, beetroot, tomato, red pepper, onion, parsley, mint and pomegranate seeds.
(3) Add sumac, drizzle the pomegranate molasses and olive oil over ingredients.
(4) Add halloumi. Season with pepper and a good squeeze of lemon. Serve immediately.
