Aphrodite Halloumi Fattoush Salad Recipe

Halloumi Salad Recipe by Will Studd


  • 1 (cut 2cm thick) Aphrodite Halloumi
  • OR Aphrodite Goat Milk Halloumi
  • 1 large toasted pita bread
  • 1 cos lettuce
  • 1 bunch on pea shoots or watercress
  • 2 tomatoes
  • 1/2 cucumber
  • 3 medium cooked beetroot
  • 1/2 white onion
  • 1 red pepper/ capicum
  • Drizzle of pomegranate mollasses
  • Seeds of 1 pomegranate
  • Pinch of sumac
  • Drizzle of pomegranate mollasses
  • Good drizzle of olive oil
  • Handful of flat leaf parsley
  • Generous squeeze of lemon juice
  • Cracked pepper to taste
  • Torn mint leaves


01: Heat a non stick pan to medium to high heat. Add thickly sliced halloumi to pan and cook for approximately 2 minutes on either side or until golden brown.

02: Combine toasted pita bread, pea shoots, cos, beetroot, tomato, red pepper, onion flat leaf pepper and pomegranate seeds.

03: Add sumac, drizzle the pomegranate molasses and olive oil over ingredients

04.Season with pepper and a good squeeze of lemon. Serve immediately.
