  • 1 (cut 2cm thick) Aphrodite Halloumi
  • OR Aphrodite Goat Milk Halloumi
  • 1 large toasted pita bread
  • 1 cos lettuce
  • 1 bunch on pea shoots or watercress
  • 2 tomatoes
  • 1/2 cucumber
  • 3 medium cooked beetroot
  • 1/2 white onion
  • 1 red pepper/ capicum
  • drizzle of pomegranate mollasses
  • seeds of 1 pomegranate
  • pinch of sumac
  • drizzle of pomegranate mollasses
  • good drizzle of olive oil
  • handful of flat leaf parsley
  • generous squeeze of lemon juice
  • cracked pepper to taste
  • torn mint leaves


(1) Heat a nonstick pan to medium to high heat. Add thickly sliced halloumi to pan and cook for approximately 2 minutes on either side or until golden brown.

(2)Combine toasted pita bread, pea shoots, cos, beetroot, tomato, red pepper, onion, parsley, mint and pomegranate seeds.

(3) Add sumac, drizzle the pomegranate molasses and olive oil over ingredients.

(4) Season with pepper and a good squeeze of lemon. Serve immediately.
