Aphrodite Halloumi is hand-made and hand-folded, not by a machine. This means the Cypriots simply butterfly it at the natural seam so it becomes two pockets and then fry it. We have found this holds the heat a lot better and the texture is moist. We then cut it into thin strips before serving.
Depending on your fry pan, we find a medium to high heat that works best.
Simply serve with a good squeeze of lemon.
