Fresh & Brined Cheese

Fresh cheeses are exactly as their name suggests – soft, deliciously moist, naked curds with no protective rind and a high moisture content. They are relatively simple cheeses by definition, and are made from all types of milk. They include delicate cheeses such as Fromage blanc, cream cheese and fresh curd. Related cheeses include cheese preserved in brine such as Feta and Halloumi and fresh stretched curd cheeses such Mozzarella and Bocconcini.
