With their oozing, seductive texture and creamy, fungal flavour, soft surface-mould ripened cheeses made from cow’s milk are among the most accessible specialist cheeses. Identified by its soft white rind and creamy texture. A group that includes brie, camembert, double creme cheese & traditional triple cream cheese also known as ‘bloomy’. The rind can be white, mottled, sometimes a bit wiggly. The rind serves to protect the cheese whilst it matures – eating it is optional.
