Cheddar is one of the world’s best-known cheeses, but did you know that it takes its name from the village of Cheddar in England’s southwest? Will visits the area’s famous gorge and caves before traveling to meet the Keen and Montgomery families, the last two farmhouse producers of cloth-bound, raw-milk cheddar. He explores how the original cheese was made, including the all-important cheddaring process. Finally, he meets Randolph Hodgson, of the influential London cheese shop Neal’s Yard Dairy, to investigate how the best farmhouse cheddar is graded.
