Will Studd Selected High Altitude Comté

Comté is the most popular raw milk cheese in France, but not all cheese bearing the famous name is the same. Unlike most of the Comte shipped to Australia, this rare example of high-altitude Mountain Comté has been selected for its flavour profile rather than age or price.
We choose our Comté wheels from JUST three small dairies that collect milk from herds grazing above 650 metres in the mountains bordering France and Switzerland. The exceptionally rich cow’s milk produced here has an enhanced nutritional profile, and quality is dramatically influenced by climate, season, and the diversity of grasses, herbs, and wildflowers.
Mountain Comté is highly sought after in France by affineurs because of its provenance.
Careful maturation to the perfect point of ripeness depends on many variables. Every small batch is intriguingly different and every wheel offers a tantalising taste of time and place.
Reservation
Aged for a minimum of 16 months, these crusty wheels have a rich,
concentrated texture and a kaleidoscope of flavours. Look out for delicate
caramel aromas and lingering hints of hazelnuts, wildflowers, and cut grass.
Grand Affinage
Aged for at least two years, these thick, crusty-rind wheels have an
exceptionally dense texture and occasionally contain sweet crunchy tyrosine
crystals. Stronger and more savoury in flavour than younger Comte, look
out for subtle hints of nuts, grilled onions, damp earth, and cocoa.
